Welcome to my very first blog post!! Today I'm sharing this quick and delicious chickpea gyro recipe. I served the roasted chickpeas on naan bread and topped it with a creamy dill sauce, cucumber, tomato, fresh dill and Violife vegan feta cheese.
I start by rinsing a can of chickpeas and adding them to a bowl. Then I added two tablespoons of avocado oil, 1 teaspoon of cumin, 1/2 teaspoon of onion powder, 1/2 teaspoon of garlic powder, 1/4 teaspoon of salt, 1/4 teaspoon of black pepper and 1 teaspoon of smoked paprika. Mix together with a spoon until the chickpeas are coated. Add some oil to a frying pan and once it's heated up, add in your chickpea mixture.
Make sure to turn the chickpeas over in the frying pan so they get nice and crispy on all sides. Once they become crispy, turn off the heat and leave aside until you're ready to assemble your gyro.
Next we're going to make the creamy dill sauce by combining 1/2 cup of vegan yogurt (I used President's Choice coconut yogurt), 1 tablespoon of lemon juice, 1/4 cup of freshly chopped dill, salt and pepper to taste, 1/4 teaspoon of garlic powder and a splash of dill pickle brine. If you love dill as much as I do (slightly obsessed) you can add some dried dill in as well. Mix together the sauce until it's all combined.
Now you're going to assemble your gyro. I added my dill sauce to the naan bread first, then added the crispy chickpeas, followed by my toppings. I added chopped cucumber, diced tomatoes, fresh dill and the Violife vegan feta. Wrap up the naan bread and enjoy!!
