Veggie Stew


5 cups of vegetable broth

1 cup of water

4 cups of potatoes

1 can of peas

1 package of mushrooms

2 large carrots

1/2 tbsp smoked paprika

1/2 tbsp garlic powder

1/2 tbsp onion powder

1/2 tsp salt

1/2 tbsp Italian seasoning

4 cloves of garlic

2 tbsp vegan butter

1 tbsp tomato paste

1/2 tbsp tamari

1/8 tsp red chili flakes

2 tbsp flour


  1. Peel and dice your potatoes

  2. Add vegan butter and garlic to your Instant Pot and select the sauté function

  3. Cook the garlic for 1-2 minutes and then add your carrots and mushrooms. Once they've softened, add your potatoes and peas in

  4. Mix in your spices and salt and pepper

  5. Slowly pour in your vegetable broth and water

  6. Add your tamari and tomato paste and stir

  7. Slowly sift in your flour and stir well

  8. Set Instant Pot to "Stew" mode for 15 minutes

  9. Release pressure and let the stew cool down

  10. Serve with grilled cheese and enjoy!
