1/2 can of rinsed chickpeas
1/2 can of rinsed black beans
half of a tomato
salt & pepper
vegan cheese shreds
vegan sour cream
2 gluten free tortillas
Add chickpeas, black beans and tomato to your food processor/blender and pulse. You do not want it to be too smooth, so don’t over process.
Add mixture to a bowl and then add all of the spices.
Add fresh cilantro and mix through.
Add the mixture to a tortilla and then place in an oiled frying pan.
Top with vegan cheese shreds.
Place another tortilla on top and add a heavy object to held press it down.
Cook for a few minutes and then flip.
Remove from heat, cut and serve with sour cream, hot sauce and salsa.
