Buffalo Chickpea Quesadillas


• 1 can of chickpeas

• 1/4 cup of Buffalo sauce

• 2 green onions

• 2 tortillas

• Vegan sour cream

• Salsa

• Vegan cheese shreds

• Vegan butter

• 1/2 tsp garlic powder

•1/2 tsp onion powder

•1/8 tsp salt

•1/2 tsp black pepper

• 1 tsp dried dill


  1. Rinse and drain a can of chickpeas and add to a bowl

  2. Add in green onion, Buffalo sauce, garlic powder, onion powder, salt and pepper and dried dill

  3. Using a potato masher, mash the chickpeas into a smooth consistency

  4. Heat your pan with vegan butter and add your first tortilla

  5. Spread the chickpea mixture onto the tortilla and add your vegan cheese on top of the chickpeas

  6. Add the next layer of tortilla and place something heavy to press down on the tortillas. I used another frying pan.

  7. Flip the tortilla to cook on the other side

  8. Cut into slices and serve with salsa and sour cream
