Cucumber Dill Salad

This cucumber salad is perfect as a summer side or works as a great cold lunch option. It takes minimal ingredients and time, which is perfect when you're short on time. It holds well in the fridge and serves four.


2 peeled and sliced cucumbers

1/2 cup coconut yogurt

2 tsp dried dill

1 tsp vinegar

1 tsp minced garlic

1/4 tsp salt and pepper

1 tsp sugar

1 tbsp vegan mayo


  1. Peel and slice two cucumbers

  2. Make the sauce by combining yogurt, dill, vinegar, garlic, salt and pepper, sugar and mayo

  3. Toss the sauce in with the cucumbers

  4. Refrigerate until serving

  5. Enjoy!
