Smashed Garlic & Parmesan Potatoes


  • 6 white potatoes

  • 2 tbsp melted butter

  • 1 tbsp minced garlic

  • 1 tbsp fresh parsley

  • Vegan sour cream (Tofutti)

  • Follow Your Heart Parmesan


  1. Clean the potatoes and boil them for 15-20 minutes until a fork can pierce through

  2. Pre-heat oven to 450°

  3. Add potatoes to a baking dish and lightly smash them flat with a cup

  4. Brush the potatoes with the melted butter, parsley and garlic mixture

  5. Cook for 20 minutes

  6. Remove and top with sour cream and parmesan
