Sushi Bowls

I was craving sushi last night but didn’t feel like ordering takeout, so I whipped up this quick and easy deconstructed sushi bowl with spicy “crab.”

Ingredients:

  • 1 can of Hearts of Palm

  • 1 tbsp vegan mayo

  • 1/2 tsp Old Bay seasoning

  • Nori sheets/flakes (I blended mine up)

  • 1/2 cucumber

  • 1 peeled carrot

  • Avocado (I was out)

  • 2 cups of rice

  • 1 tsp sushi rice vinegar

  • 1 peeled sweet potato

  • Squirt of lemon juice


Instructions:

  1. Peel and chop your carrot, cucumber and sweet potato

  2. Prepare your rice

  3. Coat sweet potato in oil and cook at 425° for 20-25 minutes

  4. Add your Hearts of Palm to a bowl and mash with your hands or a fork.

  5. Add in your mayo, lemon juice and Old Bay into your Hearts of Palm and mix well. This makes the spicy “crab”

  6. Add sushi rice vinegar into your rice and let it cool

  7. Assemble your bowl with rice, sweet potatoes, cucumber, carrot, avocado, spicy crab and nori flakes
