Vegan Broccoli Cheddar Soup

Growing up my grandma always made me soup and grilled cheese and now it's my favourite comfort meal. This vegan broccoli cheddar soup is always a hit and is super easy to make! Make sure to serve it up with some grilled cheese.



Ingredients:

  • 4 cups of steamed broccoli

  • 1 large carrot (peeled and diced)

  • 1 celery stalk (diced)

  • 1 tbsp butter (Vegan Becel)

  • 2 cups peeled potatoes (diced)

  • 1/2 cup cashews

  • 4 cups vegetable broth

  • 3 tbsp nutritional yeast

  • 1/2 tbsp salt

  • 1 tsp black pepper

  • 1 tsp paprika

  • 1 cup of vegan cheese shreds


Instructions:

  1. Wash and chop 4 cups of broccoli to be steamed

  2. Peel and dice your carrots and potatoes. Dice your celery.

  3. To a pot with butter add in your carrots, potatoes, celery, cashews, nutritional yeast, salt, pepper, paprika and vegetable broth

  4. Bring to a boil for 20 minutes covered

  5. Remove from heat and blend with an immersion blender or transfer to a high speed blender

  6. Add in 1/2 of the steamed broccoli and blend

  7. Add the rest of the broccoli, plus cheddar cheese, into the soup and stir

  8. Serve with grilled cheese, bread, or alone, and enjoy!
