As the rice paper bacon video that I did on TikTok went viral a few months ago, I decided to use the bacon in this clubhouse sandwich. I used to love clubhouses growing up, but obviously can't had a traditional one anymore as they include bacon and chicken. I decided to use Sweet Simple Vegan's rice paper bacon recipe and add tofu chicken. Recipe is below, so keep reading!
One block of extra firm tofu
Rice paper bacon (Sweet Simple Vegan: https://sweetsimplevegan.com/2020/01/crispy-vegan-bacon/)
Daiya cheddar cheese
Hellmann's vegan mayonaise
Little Northern Bakehouse gluten-free bread
1 tsp garlic powder
1 tsp Italian seasoning
1/2 tsp black pepper
1/4 tsp sea salt
Open tofu package and wrap tofu in paper towel. Set aside for 15 minutes until the water is removed.
Thinly slice the tofu and then add to a mixing bowl
Coat the tofu in vegetable broth (or chickenless bouillon if you have that)
Add the garlic powder, Italian seasoning, salt and pepper
Marinade the tofu for 10 minutes
Heat up a frying pan and add the tofu and sauce. Cook until the tofu is crispy/browned
Assemble your sandwich by adding mayo to all pieces of bread
Add iceberg lettuce, cheddar cheese, tofu and the middle bread piece
Add rice paper bacon, tomato and the top piece of bread
Cut in half or quarters and enjoy!
